Curry & cheese bread

You will need:
  • 225 g bread flour ("harina de fuerza", in Spanish)
  • curry
  • thyme
  • toasted sesame seeds
  • 1 small teaspoon salt
  • 1.5 small teaspoon (full!) of yeast (real yeast, not chemical)
  • 45 g grated cheese (french emmental works fine)
  • 1 tablespoon honey
  • 150 ml warm milk
  • 1 tablespoon butter
Mix together all dry ingredients (as much curry, thyme and sesame as you like) and add the milk and immediately the honey to it. Stir slowly to let it mix well until the dough is done, add slowly the butter, working with your hands. Let it rise in a warm place for at least 1 hour, 2 better. Punch the dough (to stop the growing process, they say) and form an oval-like shape with it. Let it rise again for 40 minutes. Wet the top of it with milk and bake for around 30-45 minutes at 190ÂșC. It will be done when you hit it and sounds somewhat hollow.
